Mini Taco Cups

I am so excited about these! I have to tell you, I dream up a lot of recipes and get a thrill out of trying new things, but this was one of those moments where everything just clicked. A why-didn’t-I-think-of-this-sooner ‘aha’ type scenario. It’s more of an idea than a ‘recipe’ as it doesn’t involve any cooking…or dishes…or pots and pans, but check this out. Are you ready?

Tostitos Scoops tortilla chips = a corn tortilla shell for a taco appetizer bite!

And they are completely gluten free!

And can be fully vegetarian!

And you can make them using all store-bought ingredients!

Brilliant, right? Okay, I’m done.

I made two versions of these, one with flavored vegan soy crumbles (be cautious of the ingredients if you are gluten conscious) and one without. I think both ways are delicious. You carnivores may beg to differ so feel free to brown up some crumbled ground beef with a little cumin, garlic powder and S & P. If you want to cook nothing, skip this step.

Seriously, though…how cute (and convenient) are these?? Okay, I’m done for real.

Ingredients:

Tostitos Scoops tortilla chips

Shredded Mexican cheese

Shredded lettuce

Black beans

Guacamole

Salsa

Cooked ground beef or soy crumbles, optional

Instructions:

Fill the Tostitos Scoops with ingredients from above.

Eat and enjoy this genius idea! Okay, seriously. All done.
