Simple Stovetop Granola

Granola is such a delicious snack, either in handfuls on its own, paired with milk, or as a way to jazz up your morning yogurt. However, it’s often loaded with sugar and sometimes very pricy for even the smallest batch.

You would typically prepare something like this in the oven

for a crunchy result, but I was happy with the texture that it produced when I flashed it in the pan. I used coconut oil for a healthy fat that offered a ton of natural sweetness without the need to add anything.

While most granola is filled with dried fruit that can be packed with artificial ingredients, I opted for fresh, juicy blackberries. They infused into the oats and made for a lovely burst of tartness in each bite.

A dash of cinnamon sprinkled over top was all this needed to reach the flavor I was looking for. Of course you can mix in honey, nuts, flax or shredded coconut if you desire, but for me the simplicity was juuuust right. Goldilocks would be proud.

Ingredients:

*per one person serving*

1/4 cup old-fashioned oats

2 tablespoons coconut oil

Handful of blackberries (or fruit of your choice)

Dash of cinnamon to taste

Plain Greek yogurt

Instructions:

Melt coconut oil in a pan.

Stir in oats.

Add blackberries or fruit of your choice.

Allow to cool, then pour over yogurt.

Sprinkle with cinnamon and mix together.
