Bacon, Egg and Cheddar Cups (For people & pups!)

Turns out, everybody loves bacon. People, dogs, you name it. Pretty much everyone except pigs would be very happy to chow down on a piece of the crackling, smoky good stuff.

Every year for Mo’s birthday, I always serve him bacon and eggs in his bowl, so I wanted to come up with something along those lines to celebrate him turning 6 next week (wow!). These pop-in-your mouth treats are right on the money.

A golden puff of scrambled egg marries with the salty cured meat, sharp cheddar cheese and a pinch of seasoning, all baked in a mini muffin tin. Perfect for AM portions or a great party app. (perhaps for your pup’s next fiesta!)

Full of nutrients and flavor, these are a savory snack all your guests will be rolling over for.

Ingredients:

*Makes about 24 mini cups*

7 eggs

4-5 strips of bacon

3/4 cup shredded sharp cheddar cheese

1/4 teaspoon garlic powder

1/4 teaspoon dried parsley

Instructions:

Preheat oven to 350º. Whisk eggs together in a bowl.

Dice bacon.

Add to eggs.

Season with garlic powder and parsley.

Coat a mini muffin tin with nonstick cooking spray. (You can tell this pan has had a lot of use!)

Pour egg mixture into each spot, about 2/3 of the way full.

Sprinkle each with about 1/2 tablespoon of cheddar.

Bake for about 20 minutes, until they puff up and a toothpick in the center comes out clean.
