My brother often has a lot of very specific food requests. Globs, not swirls, in his peanut butter ice cream, the keylime pie I make him must be bright green, and for his housewarming party last weekend, cookies with white chocolate chips, red Craisins and BLUE MnMs. Just blue.
He said it reminded him of a dessert he enjoyed in our highschool cafeteria ten years ago, and was hoping to indulge in again. I can happily recall those cookies. Ooey, gooey soft. Barely baked. Sending us on a sugar high before our afternoon classes, and quite possibly giving us a healthy dose of salmonella because I’m pretty sure they were never cooked all the way through. Totally worth it.
This particular color scheme Jeff was referring to must have been for a specific time of year. Perhaps Memorial Day because we would’ve been off during July 4th. And while you are very in tune to how much I love any foods sporting a red, white and blue motif, I asked if he could be flexible about the hues of MnMs I used. He complied. After all, it’s not Memorial Day, it’s not July 4th, and frankly it’s not fun to tediously pick out a particular candy coated shell amidst a bag full of rainbow options.
But for Jeff, of course, I made one special. The way he wanted. His very own cookie out of that pile.
Let me tell you, they were all insanely melt-in-your mouth fantastic. Each and every brightly colored cookie in that mix. The whole plate was cleared out before I turned around! Soft and gooey just like we remembered, although I made sure mine were cooked through to what I believed would be approved by FDA standards. You know, in case they stopped by the party to check.
Ingredients:
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
1 cup white chocolate chips
1 cup MnMs (whatever color you feel)
1 cup dried cranberries, like Craisins
Instructions:
Preheat oven to 375°. Combine flour, baking soda and salt in small bowl.
In a large mixing bowl beat butter,
White sugar,
Brown sugar,
And vanilla.
Mix until creamy.
Add eggs, one at a time.
Gradually beat in flour mixture.
Toss in MnMs,
White chocolate chips,
and Craisins.
Use an ice cream scoop (obviously) to portion cookies onto a parchment lined baking sheet.

Bake for 8-10 minutes, then transfer to a cooling rack. They should be very soft.
Eat and enjoy with your favorite brother!
