Chocolate Souffles and Snowy Days

I’ve had Hubby home for two whole weeks now, and it has been incredible. The beginning began with full force; driving long distances for birthday celebrations and holiday parties, running around shopping…then wrapping… the most perfect gifts for each occasion, cooking and baking goodies to never go anywhere empty-handed and returning home late. (And I don’t mean late for a non-pregnant person, I mean substantially past 1am after being up since 7.)

There was our maternity photo shoot with Amanda Rose Photography, and the arrival of our nursery furniture, and a trip to RI to ring in the new year, dining and dancing with dear friends. (Don’t be fooled people, even this with this big belly, I’ve still got moves…).

Then amidst the bookends of busy social plans and family gatherings fell a few days of pure, uninterrupted bliss with Hubby. At home with nowhere to be and nothing to do other than sip hot cocoa and make pizzas and enjoy breakfast in bed (thanks, my love!) and stay in said bed until after noon, wearing pajamas, only to pretend getting dressed meant putting on a different pair of pajamas later in the day.

There was cuddling with my head resting in ‘the nook’ on Hubby’s chest, and movies under Snuggies, and board games, and cookies, and fuzzy socks, and heavenly naps just because we could.

Then there was the uncharacteristically warm December day when we took Mo for a long walk, and the exciting moments putting finishing touches on our soon-to-be baby girl’s room. I rocked in the glider while we read books and sang lullabies to my growing bump. In awe, we observed the little person inside me poke and kick, as happy tears filled my eyes, and I let out squeals of giddiness.

There were voluntary hair and foot rubs from the guy I was lucky enough to marry, who after 9 years of knowing each other I could still spend every moment with and not get tired of.

And what else? These decadent chocolate soufflés. Light and fluffy with a hint of cinnamon and a crunchy, sugary crust. Just for us. Just because. Not for a holiday or for company, not to throw a party with…or show up at a party for. They were a what-the-heck-I-feel-like-baking-because-it’s-Friday-and-you’re-home-and-we’re-snowed-in-and-life-is-good-chocolate soufflés.

And they. were. delicious. Just like these past two weeks.

Ingredients:

3 tablespoons granulated sugar, divided

2 1/2 ounces semisweet or bittersweet chocolate, chopped

1 large egg, separated, plus 2 large egg whites

1 tablespoon heavy cream

1 teaspoon all-purpose flour

1/8 teaspoon ground cinnamon

1/8 teaspoon salt

Confectioners’ sugar for dusting (optional)

Instructions:

Position rack in center of oven; pre-heat to 375°. Lightly coat two 10-ounce ramekins with cooking spray.

Coat the insides of each with 1 1/2 teaspoons sugar.

Place chocolate in a small microwave-safe bowl. Microwave on medium, stirring every 20 seconds, until melted.

In a medium bowl, whisk egg yolk and cream until combined.

Whisk in chocolate until smooth.

Then whisk in flour and cinnamon until incorporated.

In the bowl of your mixer, combine egg whites

And salt.

Mix on high-speed until soft peaks form.

Beat in the remaining 2 tablespoons sugar in four additions, until stiff, glossy peaks form.

Using a rubber spatula, gently fold half the beaten whites into the chocolate mixture until fairly smooth.

Gently fold this combined mixture back into the remaining egg whites, until no white streaks remain.

Pour into prepared ramekins and place on a baking sheet. Bake until puffed and firm to the touch, 18 to 22 minutes.

Mine weren’t as puffed up as I would’ve liked, but not bad for a first attempt at what is rumored to be ‘the hardest dessert to make’!

Dust with powdered sugar, if desired. (I desired!)
