Sweet Dreams Book & Carrot Cake Pancakes *As Seen on CT Style*

0

Did you miss it live? Catch up with me on the CT Style couch promoting my new children’s book, Sweet Dreams, and in my usual kitchen spot making That’s SO Jenn’s healthy Carrot Cake Pancakes! They look (and taste!) like dessert– a perfect breakfast to enjoy the morning after reading your new favorite bedtime story–and a nod to a pivotal point of the book. Special thanks to everyone who has already sold me out of Amazon pre-orders (now re-stocked!). Sweet Dreams is also still available for pre-orders at BarnesandNoble.com, and you can get your signed copies right here at That’s SO Jenn!

I’ll be doing a reading/signing at A Joyful Noise Paper Co. in Monroe, CT on December 6th at 10am, the day of the official book launch! I look forward to seeing you there!

  • For Pancakes:

    1 cup all-purpose flour

    3/4 teaspoon vanilla

    2 teaspoons baking powder

    1 teaspoon salt

    1 egg, beaten

    1 cup milk

    2 tablespoons applesauce

    1/4 teaspoon cinnamon

    1/8 teaspoon nutmeg

    1 cup shredded carrots

    1/2 cup raisins

    1/2 cup chopped walnuts

    For Frosting:

    1 (8oz) package Neufchatel cheese

    1 cup vanilla yogurt

    1 cup shredded coconut

    1/2 teaspoon vanilla extract

  • Instructions:

In a large bowl, mix flour, baking powder, cinnamon, nutmeg and salt.

Add milk, egg, applesauce, vanilla, carrots, raisins and walnuts. Mix well.

In a separate mixing bowl or Kitchen Aid, blend Neufchatel cheese, yogurt,

    vanilla extract and coconut.

Coat a pan with non-stick cooking spray and place over medium heat.

Spoon desired amount of batter onto pan and cook on both sides until golden.

Serve with frosting and garnish with additional shredded coconut, optional.

To make a ‘cake’, layer pancakes with frosting and top final layer with frosting and coconut. Makes 2-3 full size pancakes depending on the circumference of your pan.

Eat and enjoy while reading Sweet Dreams!
