Welcome to day 13 of our 4th of July recipe countdown! This final dessert on our list has been a favorite of mine since I was a kid. My mom used to bake these for my birthday parties and let all the children choose their toppings.
Of course, I had to color coordinate them for the occasion so I used red velvet cake (yum!), white cream cheese frosting and sparkly blue sugar. It’s the feeling of eating ice cream without the sticky mess and the joy of cake without plates or utensils. Done and done.
Ingredients:
1 box red velvet cake mix
1 (24) package flat bottom ice cream cups
Cream cheese frosting
Blue sugar
Instructions:
Preheat oven to 350° and prepare batter according to instructions.
Set up ice cream cones in a mini muffin tin.
Fill batter half way in each cone and bake for 20 minutes until toothpick comes out clean.
Allow to cool and top with frosting. I used a star-shaped piping tip to go with our theme, leaving the red exposed in the center.
Top with a sprinkle of blue sugar.
Eat and enjoy your red, white and blue!
