Nanny’s Potato Latkes
Ingredients:
4 potatoes (two cups, peeled and grated)
1 onion, grated or chopped
2 eggs, beaten
4 Tablespoons matzo meal
Salt and pepper to taste
Canola oil for frying
Lots of TLC
Instructions:
Peel and grate potatoes and onions into a large bowl. Alternating them in the bowl will help keep the potatoes from oxidizing. Let stand for ten minutes and drain liquid that’s risen to the top. Do not rinse. Squeeze excess liquid with paper towels. Add eggs, matzo meal and salt and pepper to taste. Form patties with hand or ice cream scoop. Coat frying pan with oil and heat over medium high. Add patties to the pan and cook for a few minutes on each side until golden brown. Place finished latkes on a plate covered with dry paper towels to absorb access oil. Immediately add a dash of salt to the hot latkes. Continue to add oil for each batch when necessary. Sit, eat and enjoy.
Mini Bagel and Lox Latkes
Ingredients:
½ cup spreadable goat cheese
½ cup chopped smoked salmon
4 full scallions, diced (use greens and whites)
Chopped capers and finely diced tomatoes for garnish
Instructions:
Follow latke recipe and use melon baller to make miniature latkes. Mix above ingredients together and place a spoonful on top of a mini latke. Top with chopped capers and diced tomatoes.
Latkes with Caviar and Crème Fraiche
Ingredients:
1 jar caviar
1 tub crème fraiche
Instructions:
Top latkes with a dollap of crème fraiche and a spoonful of caviar.
Crispy Latkes with Sunny Side Up Egg, Truffle Oil and Parmesan Cheese
Ingredients:
Homemade Latkes (see recipe above)
Eggs
1 bottle of truffle oil
1 block fresh parmesan cheese and grater
Salt and Pepper to taste
Top latke(s) with sunny side up egg. Drizzle with truffle oil and sprinkle with freshly grated parmesan cheese. Add salt and pepper to taste.
Dried Cherry Applesauce
Ingredients:
4 red apples, peeled and sliced
½ cup apple cider
1/2 cup dried cherries
2 cinnamon sticks
Instructions:
Combine above ingredients in a small saucepan and cover. Bring to a boil, then simmer until liquid is mostly evaporated and apples are soft (about 20 minutes). Remove cinnamon sticks and mash ingredients with a potato masher. Serve on the side of latkes or eat as a snack!
Cajun Fire Roasted Pepper Sour Cream
Ingredients:
1/3 cup sour cream
1/3 cup jarred red and yellow fire roasted peppers, finely diced
¼ teaspoon Slap Ya Mama white pepper blend seasoning
Instructions:
Coat diced peppers with white pepper blend cajun seasoning (I use Slap Ya Mama brand) and thoroughly mix with sour cream. Served on the side of latkes.
