I came across these peanut butter bites, which were apparently listed in a pregnancy magazine article as some of the best things to eat. I figured I had to give them a try, you know, for the baby. Although the original recipe calls for dipping them in melted chocolate, I left that out (gasp!) and substituted crushed cinnamon graham cracker crumbs instead. 1. It seemed like a healthier option 2. I didn’t have patience to wait for chocolate to harden on a piece of wax paper.
These sweet, protein-packed, good-for-you treats came together in only four ingredients and a matter of moments. Portioning them with my ice cream scoop only made six–a perfect amount for breakfast or snack for two (or one, I’m not judging…), but you can certainly make yours smaller or double the batch so they last longer. Deelish!
Ingredients:
3/4 cups oats
1/2 cup peanut butter
1 tablespoon honey
About 1/2 cup cinnamon graham cracker crumbs
Instructions:
In a bowl combine oats,
Peanut butter,
And honey.
Mix well.
In a small bowl, crush graham crackers into crumbs.
Form peanut butter mixture into balls.
Roll in crumbs.
Eat and enjoy for breakfast or snack!
