Oh you know, just a typical Tuesday…
My cousin Abby is visiting from Maryland for the week, so we’re basically on permanent slumber party mode. And with that comes fun late night snacks followed by yummy morning breakfasts. The idea behind this one was to figure out how we could take something already delicious (pancakes) and make them even more fantastic. And healthy. (HA just kidding about that part). The answer—>Nutella.
I turned to Martha Stewart’s recipe for the batter. Figured it was a sure bet—that woman knows everything. Then I added a glob of the beloved chocolate hazelnut spread in the center—because I know a thing or two as well.
The fluffy pancakes are sweet enough no syrup is required, and the ooey-gooey melty surprise inside reminds us why they say breakfast is the most important meal of the day.
Ingredients:
Ummm the original recipe says it makes 12-15 pancakes. I made 6. The recipe says it serves 4, but the two of us did just fine…

1 cup all-purpose flour, (spooned and leveled)
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
2 tablespoons unsalted butter, melted, or vegetable oil (I used vegetable oil)
1 large egg
1 tablespoon vegetable oil for the griddle
About 1/2 cup Nutella
Instructions:
In a medium bowl pour milk,
Oil (or melted butter),
And egg.
Whisk together.
Add flour,
Sugar,
Salt,
And baking powder.
Whisk until just moistened. Do not over mix (a few small lumps are fine.)
Bring a pan or skillet to medium heat. Fold a paper towel in half and moisten with vegetable oil. Carefully rub onto the surface.
Drop 2 or 3 tablespoons of batter onto the skillet.
After a minute or two, add about a tablespoon of Nutella.
Flatten gently with a spatula. (Too much pressure will make it stick to your utensil.) Doesn’t it look like dessert sunny side-up eggs?
Pour a small amount of batter on top of the Nutella.
Flip pancakes and allow to cook for another minute or two on the other side, until golden brown.
Stack on a plate and top with powdered sugar.
Eat and enjoy with your cousin!
