I DO like green deviled eggs and ham, Eat them eat them if you can. Or something like that…

While I prefer to steer clear of artificially dyed foods (AKA green bagels that make you question their freshness), I am a big fan of celebrating Saint Patty’s Day with foods that are naturally green. Like avocados.

So for this simple appetizer/snack, I’ve given deviled eggs a twist by substituting calorie laden, fatty mayo with good fat from guacamole. Same creamy consistency and all the flavor you love, but with added health benefits from this skin brightening, nutrient dense, vitamin rich substitute.

Which leaves us room for bacon. A crispy, smokey addition honoring the ham portion of our green eggs and ham. I’m sure Dr. Seuss would approve. Our two-year-old MnM certainly does.

Cilantro (or parsley) over top adds another pop of color and flavor, while crystallized bits of sea salt make for a nice crunch. You’ll be sorry you ever laid eyes on that green bagel.

TSJ’s Green (Deviled) Eggs and Ham

Ingredients:

Hard boiled eggs (1 egg = 2 servings)

Guacamole (Store bought OR mash together 2 ripe avocados, 1/4 cup diced white onion, 2 tablespoons lime juice, about 2 teaspoons garlic salt and pepper to taste)

Bacon for garnish

Parsley or cilantro for garnish

Sea salt for garnish

Boil eggs and peel shells completely.

Cut each egg in half and remove yolk.

Place yolks in a bowl and add a few spoonfuls of guacamole recipe, to taste. Mash with a fork until incorporated.

Preheat oven to 400 degrees and place bacon side by side on a foil-lined baking sheet. Bake for about 15-20 minutes, until crispy. Once cooled, cut into small pieces.

Fill empty egg whites with guacamole mixture. Garnish with green herb of choice (parsley, cilantro…)

Top with bacon bits and sea salt.
