No-Bake Energy Bites

There are a few times throughout the year when we must switch over our seasonal wardrobe (hello tank dresses, goodbye furry vests!), change up some of our home decor (Lemon-print glasses back in the cabinets, mason jar candles out on the deck…), and just have a good ole’ evaluation session of things we want to keep, start using or toss. I’ve decided to do the same with my Pinterest boards. It’s fun to pin. Like an addict, you repeatedly push that enticing red button. Then before you know it, 3am has arrived, you’re hungry from all the mouthwatering food photos and you’re now an online hoarder.

As you know, I pride myself on creating my own recipes. It’s what most of That’s SO Jenn is all about—-original ideas or my take on a classic. However, it’s always fun to check what other talented bloggers come up with, taste for myself, and provide feedback to all of you.

So today, I decided to dive into these energy bites I had saved on my ‘Feed Me’ board. Another friend showed interest in these as well, which even further validated my choice to give them a whirl. They incorporate the healthy, versatile ingredients I’ve been soo into lately: oats, flax, coconut….and even use mini chocolate chips, which was the final pull to grab my attention.

I pretty much followed these exactly, only substituting agave syrup for the honey and nixing the vanilla extract completely. These are perfectly sweet and addictive. They taste just like a Chewy bar, but without the artificialness. (Is that a word?) I’m sure you could make these into any shape, but the pop-in-your-mouth style makes it easy to eat a lot of them at once…which come to think of it may become a problem….

Ingredients:

Recipe from Smashed Peas and Carrots

1 cup oatmeal

1/2 cup peanut butter (or other nut butter)

1/3 cup honey (I used agave syrup)

1 cup coconut flakes

1/2 cup ground flaxseed

1/2 cup mini chocolate chips

1 tsp vanilla (I omitted this step–they are perfectly sweet without it!)

Instructions:

In a medium bowl add oats,

And chocolate chips.

Mix well and refrigerate for an hour.

Roll into balls. I used a cookie scoop for consistent sizing.
