Let the countdown begin! As you know, 4th of July is one of mine and Hubby’s most favorite times of the year. It always feels like the true kick-off to summer, having all our closest friends fill our backyard with homemade BBQ-style food, festive desserts, great music and refreshing signature drinks. We truly look forward to
this great opportunity to get everyone together in the sunshine, ending the evening with a fireworks display, tikki torches, and s’mores over the fire pit.
I am excited to share That’s SO Jenn’s party tricks with you for a simple, affordable spread of red, white and blue treats your guests will surely be talking about. First up on our list: No-bake fillo cups with cool vanilla pudding, fresh berries and lemon zest. The instant filling and perfectly sized berries leave little prep, while the shells require zero heat from your oven. A pop of citrus adds a gourmet brightness before the final bakery-style touch of powdered sugar gets sprinkled over top. Present them in a flag formation as I’ve done above, and you’re ready to celebrate America!
Ingredients:
2 packages Athens fillo shells (in the frozen section)
1 (3.4 oz.) box instant vanilla pudding and pie filling
2 cups cold milk
1 pint blueberries, washed
1 pint raspberries, washed
Lemon zest for garnish
Confectioners’ sugar for garnish
Instructions:
Line fillo cups in rows on a tray.
Prepare vanilla pudding according to instructions.
Fill each cup with about a teaspoon of pudding.
Add one blueberry or raspberry to each cup. If making a flag, place all the blueberries in the top left portion and the raspberries throughout the rest.
Top each berry with one of two curls of lemon zest.
Sprinkle with powdered sugar.
Eat and enjoy with great friends!
