4-Ingredient Flourless Peanut Butter Cookies

Hubby and I are heading off to visit our cousins in Maryland tonight, and of course I would never go anywhere empty-handed. The funny part? I don’t think anyone would let me. You see, one of the perks (?) of running That’s SO Jenn is that I never have to guess what my friends and family would want to eat because they always make requests. Even before I offer.

When I told my cousin Phyllis we were able to come she said, “We can’t wait to see you. Mike would like chocolate chip cookies and I think your banana bread looks yummy. With chocolate chips please.”

I think they are still excited to see me.ย 

But you know I love it. Who wouldn’t want to have such an easy opportunity to make someone smile? It’s like I have my own private catering company just for those I’m close with.

So in addition to baking the chocolate chip cookies and banana bread, I decided to try out one more thing. Last time they traveled to us, Abby said she wanted “anything with peanut butter”. Therefore, these 4-ingredient PB cookies I found on Pinterest seemed like the perfect option.

I just took them out of the oven, and the aroma in my house is fantastic! (Do you know how much money I save on those Yankee Candles? This place always smells like a fresh-baked treat!)

Can’t wait to dig into everything when we arrive! I mean, I’m looking forward to seeing everyone…

Ingredients:

1 cup peanut butter (I used half creamy, half chunky)

1 cup sugar

1 egg

1 teaspoon vanilla

Instructions:

In the bottom of your mixing bowl, combine sugar.

Peanut butter,

And vanilla.

Mix until creamy.

Using an ice cream scoop, portion each cookie onto a parchment lined baking sheet.

Flatten each cookie with the tines of a fork. First one way, then another. Imagine a squished tic-tac-toe board.

Bake for 10-12 minutes, then allow to sit for two minutes before moving to a cooling rack.
