This is one decadent treat you can feel good about putting in your body. The flavor is so unique and actually really addictive. Plus, it’s full of antioxidants, whole grains and nutrients so you’ll definitely want to keep this in your back pocket. (The recipe, not the actual cereal. That would be too messy…) I’m not quite sure where I was going with this creation to be honest. I recently purchased a large tub of coconut oil–a wonderful, all natural, raw element full of health benefits–and was hoping to add it to my repertoire of ingredients.
Up until this point I had used it as a hand moisturizer and an additive in my doggie’s diet, but hadn’t yet worked with it in the kitchen. I was in the mood for some kind of no-bake granola/snack mix/monkey munch type recipe and this is what I came up with. It seriously fit everything I was looking for in a midday pick me up.
The coconut oil takes on a buttery-like taste while the semi toasted Cheerios seem to mirror a savory popcorn when sautéed in the pan. Melted dark chocolate, decadent cocoa powder and shredded coconut add the ideal element of rich sweetness, making this the perfect snack.
I actually found similarities to chocolate covered pretzels, with the juxtaposition of salty vs. sugary all wrapped up with a satisfying crunch. Try it melty and warm straight from the stove or if you’re patient enough, let it cool.
You truly just have to taste this for yourself!
Ingredients:
1 cup Cheerios cereal (classic yellow box)
2 tablespoons raw coconut oil (It comes in solid form, but melts as a liquid)
2 tablespoons dark chocolate chips
2 tablespoons unsweetened natural coconut
1/4 cup unsweetened cocoa powder
Sprinkle of sea salt
Instructions:
Melt 2 tablespoons coconut oil over medium-low heat.
Pour in Cheerios and saute for a minute or two, slightly toasting the cereal.
Toss in coconut.
Add chocolate chips.
Stir until chocolate is melted and cereal is coated. Sprinkle with sea salt.
Pour cocoa powder into a resealable plastic bag.
Transfer Cheerios mix from the pan into the cocoa powder. Shake to coat.
Allow to cool or chow down immediately.
Eat and enjoy feeling good about going back for more!
