That’s SO Jenn’s Easy Peasy Caprese

Happy Monday everyone! I’m going to start off the week with a ‘recipe’ idea you’re going to want to share with all your friends, yet secretly keep to yourself so no one knows your little trick. Are you ready?

Caprese salad (aka tomato, mozzarella and basil) is a recognizable favorite for sure. The eye appealing app full of decadent, creamy cheese, juicy tomatoes and an invigorating green herb is a staple at most Italian restaurants. It’s also a great addition to any sit-down dinner or party buffet. However, when serving a crowd, it often feels like a lot of work to slice and stack all the components, hoping there will be enough for everyone.

Here’s where I come in. That’s SO Jenn has combined fresh ingredients with a little help from the store to save you a lot of prep (no need to mix your own dressing or carefully layer ingredients here!), leaving you with an easier portion for guests to grab.

Dig in!

Ingredients:

1 (3.25 lb) tub of mozzarella balls marinated with fresh herbs (I got mine at Costco)

4 pints grape tomatoes

A handful of fresh basil for garnish

Instructions:

Wash grape tomatoes and cut them in half.

Using a slotted spoon, transfer mozzarella balls into a large bowl.

Add tomatoes.

Chiffonade your basil by stacking it together, rolling it, and slicing into confetti-like strips.

Add 2-3 ladles of marinade to the bowl.

Top with fresh basil.
