Vanilla Cake

Need something to go with your vanilla frosting? If you’re ready to think outside the cake mix box, this recipe is for you. I just returned from being a bridesmaid in a dear friend’s wedding, where her mother made their cake and a groom’s cake for the rehearsal dinner. I was inspired. If she can bake a 5-tier masterpiece to feed 300 people, then we can most certainly whip ourselves into Betty Crocker mode to prepare a little something from scratch. Your friends, family and tastebuds will thank you.

Ingredients:

2 cups sugar
4 eggs
2-1/2 cups all-purpose flour
1 cup milk
3/4 cup vegetable oil
2-1/4 teaspoons baking powder
1 teaspoon vanilla

Instructions:

Preheat oven to 350 degrees. Line either two 9-inch round cake pans or one 9×13-inch rectangular baking pan with parchment paper and grease the paper and the sides of the pan well. Beat sugar and eggs together until slightly thickened, about 1 minute.

Add flour, milk, oil, baking powder, and vanilla. Beat for another minute until the batter is smooth and creamy. Don’t overbeat.

Pour batter into the prepared baking pan(s) and bake for 30 to 40 minutes or until the tops are golden and a toothpick poked into the center comes out clean.

Loosen the sides of the cake from the pan with a thin knife, then turn out onto a rack and peel off the paper.

Eat and enjoy warm from the oven or allow to cool and top with frosting!
